Cinnamon Streusel Orange Muffins




Christmas is one of my favorite times to bake. I love cranking up the Christmas music, warming up the oven and the house smelling so good. I am on the Enrichment Relief Society Activity Committee (I think that is our name now?!) and we had our dinner this last week. There were some really good recipes and I thought I would pass them along. They are tried and tested and work! We did Costco's Chicken Cordon Bleu for the main dish. BEST IDEA EVER. So easy and they were really good! We did a bread as the centerpiece at each table and a salad and rice. Dessert was a hit too!


Today I decided we would make some muffins. I found this recipe and I am hooked. So that recipe is here too! MMMM....

Cinnamon Streusel Orange Muffins

4 cups flour
1 1/2 cups sugar
4 tsp. baking powder
1 tsp. salt
2/3 cups veggie oil (I used applesause instead and it turned out great!)
1 cup orange juice
1 cup buttermilk (I never have that stuff...just put 1 TBSP lemon juice in a 1 cup measuring cup and then add milk to the top. Let sit 5 min and ta-dah...just like buttermilk!)
2 tsp. vanilla extract
4 eggs

Cinnamon middle
6 TBSP brown sugar
3 tsp. ground cinnamon

Streusel topping
1/4 cup flour
1/4 cup sugar
1 1/2 tsp. cinnamon
2 TBSP softened butter

Preheat oven to 350 degrees. In a medium bowl, stir flour, sugar, baking powder, and salt. In a seperate large bowl, whisk oil, OJ, buttermilk, vanilla, and eggs. Pour dry ingredients into wet ingredients and mix just until blended. Some lumps are okay.

Fill muffin cups halfway. Combine the cinnamon middle ingredients (the brown sugar and cinnamon) and sprinkle about 1/2 tsp. on top of each muffin cup. Spoon remaining batter over cinnamon mix so cups are 2/3 full. In a small bowl, mix the streusel topping (the flour, sugar, cinnamon and butter) to make a crumbly mix. Sprinkle on tops and bake for 20-22 minutes. Cool on wire rack. Makes 24 muffins.
